I would say the most sensitive part is on the underside of a crayfish. If a crayfish is stuck on its back, it is much more vulnerable to attack by predators than if it is sitting upright, with its killer claws at the ready! The underside is much softer than the top of the crayfish, which is hard and protected by a tough exoskeleton.
